Type of vats : concrete, small capacity, integrated thermoregulation

Reception harvest : harvest strictly manual, vibrating sorting table, dual manual and mechanical sorting, vatting by gravity

Winemaking : Cold pre-fermentation during 4 to 6 days, in order to promote the best aromatic expression and potential of our grapes, fermentation at 28°c - 30°c with a maceration of 30 to 40 days, followed by malolactic fermentation at 20°c

Barrels : 100% new French oak from the Tronçais forest

Barrel aging : 18 months in our monoliths cellars

Annual production : 18 000 bottles maximum
