ULTIMATE RESPECT FOR THE HARVEST

The property has been fitted with a new ultra-modern winery. It is entirely thermo-regulated and is equiped with small 70-hectolitre concrete vats, allowing for made to measure winemaking parcel by parcel.

After picking, the harvest is transported in small crates and then sorted by hand, on vibrating tables.
So intact berries are transformed into wine. The grapes are hand punched during the alcoholic fermentation in view of gentle extraction. A little amount of pumping over (without release) takes place during the maceration. These operations allow for the best concentration of the wine without over extraction.

The wine is matured after that for 18 months in oak barrels (40% new and 60% used once before).
