Vats : Concrete with thermoregulation

Vinification  : The grapes are hand picked and carefully sorted (berry by berry). The fermentation is completed in concrete temperature controlled vats. The vinification techniques are adapted to each batch in order to enhance its quality.

Barrels : French oak, 40% new barrels

Ageing in barrels : 14 to 18 months

Fining : If necessary, with organic egg white

Filtering : No filtration at bottling

Annual production : 60,000 to 80,000 bottles
